At the beginning of November, the staff of The Meteor discovered that Mr. Taco & Tequila Bar faced the threat of closure.

The Mr. Taco owners told Restaurant Manager Manny Gamboa that he had one month to raise the profit of the business. After hearing about this situation, Meteor’s Community Marketing Consultant Gage Matthieu wrote a food review for Mr. Taco.

“Customers started to come in, asking for the Quesabirria that Gage mentioned in his article. They saw the review online and wanted to try it,” said Manager Manny Gamboa.

After the review was published, new customers came in, with Manny noting 15 new pairs, which breathed life into the restaurant. The numbers started to pick up, and on Monday, Dec. 4, the franchise owners decided not to close down the restaurant.

“I’ve struggled my whole life, so I wasn’t going to back down without trying everything I could,” he said, stating that the numbers improved and have continued to grow this past month.

“We’re trying to make the business grow by becoming part of the community, like joining the chamber of commerce. We are also trying to do other business ventures, like merchandising and catering,” said Gamboa.

One of the reasons why Gamboa believes the restaurant doesn’t have enough business is its location, which is located across from Buc-ee’s at 3305 E. Main St.

“We’re outside the city limits, but give us a chance, come across the bridge. We are bringing authentic Mexican flavor,” he said.

Another option that Gamboa discussed was healthy options for food in the restaurant, including more salads, while also discussing the bar menu options, including more mixed drinks and a margarita flight.

With this and more on the way, including a ribbon-cutting ceremony in January and their first anniversary, Mr. Taco is now here to stay.
